Tandoori vegetables pan crust

It is so cold a weather that it's almost freezing inside. And what is better than a hot and crispy slice of pizza? No oven, worry not. Dive into the recipe to make an absolutely delectable dish using your regular kitchen ingredients. 

Ingredients

  • Readymade pizza base
  • 1 tablespoon mayonnaise
  • 1 tablespoon pizza pasta sauce
  • 1 tablespoon cheese sauce
  • 1 onion 
  • 1 capsicum
  • 1 tomato
  • sweet corn kernels
  • cottage cheese
  • refined flour
  • table salt
  • kitchen king powder
  • oregano seasoning
  • red chili flakes
  • mustard oil
  • red chili powder
  • ginger garlic paste
  • a cup of milk
Procedure

  1. Let us prepare the vegetables first. Take each vegetable one by one namely onion, capsicum and tomato. Apply mustard oil on their skin and sprinkle red chili powder on them.
  2. Put them onto a skewer and roast them directly on the flame. Be careful when the vegetables are done. Capsicum takes least amount of time, a little more on tomato. Onion needs needs to be done twice or thrice removing its skin after every roast. Do not burn the vegetables.
  3. Let the vegetables cool and cut them into thin slices.
  4. Cut the cottage cheese into small cubes. Make a thick slurry of refined flour. Add in a little of ginger garlic paste. Coat the paneer cubes with slurry and shallow fry them in oil on a non stick pan until golden brown.
  5. Now steam the sweet corns for about two minutes in a microwave.
  6. Take a small bowl and add 1 tablespoon of mayonnaise and a little of milk into it to make a smooth paste. Repeat the similar process for cheese sauce.
  7. Now take a pizza base. Evenly spread mayonnaise, cheese sauce and pizza pasta sauce. Now evenly spread the vegetables on top of the base. Add sweet corn and prepared paneer cubes on top. Now sprinkle some kitchen king powder, oregano and red chili flakes on top.
  8. Place the prepared slice onto a pan . Keep the flame on lowest. Cover the pizza with a bowl or something. Make periodic checks on the base. Ensure that it does not burn.
  9. After 10 to 15 minutes, your slices are ready.
Suggestions

  • You can add another host of vegetables and your favourite pizza toppings.
  • You can add cheese slices or mozarella cheese on top for extra cheesiness.
  • You can substitute tomato ketchup and chili sauce for pizza pasta sauce.
