Veg Manchurian

Winters are just round the corner. It is the right time to satisfy your inner food thirst without feeling guilty. And what is better than 'Desi Chinese'? So put on your cooking gloves and let us dive into the process of making a bowl of deliciousness!!

Ingredients

For veg balls

  • 1 large cabbage
  • 1 medium carrot
  • 1 medium capsicum
  • 2 inch ginger
  • 2-3 green chilis
  • table salt
  • Black pepper powder
  • Corn flour 
  • Refined flour
  • Red edible food color
  • oil to deep fry
For the gravy

  • 2 medium sized onions finely chopped
  • 6-7 cloves of garlic finely chopped
  • 2-3 green chilis finely chopped
  • half a capsicum finely chopped
  • half a carrot finely chopped
  • 1 large tomato chopped
  • A few French beans chopped
  • Tomato ketchup
  • Soya Sauce 2 teaspoon
  • Green chili sauce  1 teaspoon
  • Corn flour slurry
  • table salt
  • 1 teaspoon sugar
  • black pepper powder
  • white sesame seeds 1 tablespoon
Procedure

  1. Take all the vegetables mentioned to make veg balls. Clean them up and chop them into a uniform mixture. Add the salt into it and let it rest for 15 minutes.
  2. In the meanwhile take a pan and keep it on flame filled with oil to fry the balls.
  3. After adding salt, the vegetables loose water. Now add black pepper powder into it. Add refined flour to the mixture and keep on mixing until you get a semi- solid consistency.
  4. Now add corn flour into it and give it a good mix.
  5. Shape the balls and fry them. Your balls are ready.
  6. Now for the gravy, take a pan and put 3 tablespoons of oil into it. Add chopped garlic and chilis into it, Give it a mix.
  7. Once the raw aroma of garlic goes, add in the onions. Saute' them until golden brown. Now add capsicum, carrots and beans into it.
  8. After sometime add tomatoes into it. Once the tomatoes soften, add two spoons of tomato ketchup and two spoons of soya sauce, salt and black pepper.
  9. Give it a good mix. Now add half a glass of water into it.
  10. Let us make corn flour slurry. Take a tablespoon of corn flour into a bowl and add a little water into it. Mix them to make a uniform mixture. Add the slurry into the gravy.
  11. Now add sesame seeds into it and the fried balls. Keep the flame flow and cover the contents to simmer. Your Veg Manchurian is ready to eat.
Suggestions

  • It tastes best while cooking in mustard oil. But you can also use unsalted butter for sodium conscious preparation.
  • You add other vegetables into the gravy like baby corns, broccoli, zucchini, mushrooms and other but ensure to boil them before adding.
  • Spring onions can be used instead of regular onions.
