Fried Rice e'pice'

Welcome back to all things tasty. What is better than a bowl of fried rice and that too in your desi taste. Fried rice is every home staple as a main course or even utilizing left-overs for a quick snack. So, let's divulge into the recipe to make a dish for yourself too!
Ingredients
- A cup of rice
- 2 tablespoons of refined oil
1 tablespoon of table salt- 1 inch ginger crushed
- 1 green chili slit into two halves
- 2 medium sized onions sliced
- 1 large tomato diced
- 2 cloves of garlic finely chopped
- half a inch ginger finely chopped
- 1 green chili finely chopped
- 1 capsicum sliced
- 1 small carrot sliced
- Half a cup of sweet corn
- Half a teaspoon cumin seeds
- Half a teaspoon mustard seeds
- A few curry leaves
- Half a teaspoon coriander seeds
- 3 tablespoons of mustard oil
- Salt as per taste
- Red chili powder as per taste
- Turmeric powder as per taste
- Half a teaspoon garam masala
- A few roasted peanuts
- 1 teaspoon lemon juice
- Fresh coriander leaves, finely chopped
To boil rice
- Take the rice in a bowl. Wash them with running water 4-5 times. Now, soak them for about half an hour.
- Take a large vessel and fill it with water. Keep it on high flame. Add salt and refined oil into it.
- Once the water starts bubbling, add in the rice, crushed ginger and slit green chilis.
- Cover the vessel and cook rice until 90 percent cooked.
- Drain off the excess water and keep the boiled rice aside.
- Take a hard bottom pan and add mustard oil. Once the oil heats add in cumin seeds, mustard seeds and curry leaves and let them crackle.
- Now add finely chopped ginger and garlic and roast. Once the raw aroma goes, add in the onions. Toast them until golden brown.
- Now add capsicum and carrots to pan and toast them. Now add boiled sweet corn kernels into it.
- Lower the flame and add tomatoes. Once the tomatoes get mushier, add the seasoning namely, salt, chili powder, turmeric and garam masala.
- Add in the roasted peanuts and lemon juice into it.
- Give all the ingredients a good mix. Now add in the boiled rice. Toss them over lightly and ensure the rice gets spiced evenly.
- Sprinkle chopped coriander leaves and serve hot.
- You can add green peas too but ensure to boil them well before adding in the mixture.
- I chose ordinary white rice. You can even choose long grain basmati rice or brown rice.
- I didn't add whole spices like cardamom or cinnamon. You can also add them but ensure that you dry roast them in a pan before, finely grind it into a powder and now add this powder into your tempering.
