Mac 'n Cheese

Pasta cravings are irresistible. It is loved by children and adults alike. And do you happen to know that making a bowl of pasta isn't laborious but yielding and simple. So let's dive into making a lip smacking bowl of happiness.
Ingredients- Pasta elbows (half a cup)
- Refined flour - 1 tablespoon
- Mixed herb butter - 2 tablespoon
- Skimmed milk - 2 cups
- Oregano - 1 teaspoon
- Chili flakes - 1 teaspoon
- Table salt (as per taste)
- Black pepper powder - half a teaspoon
- A medium sized sliced carrot
- A medium size chopped green capsicum
- A small Onion sliced
- Sweet corns - half a cup boiled
- Mayonnaise - 2 tablespoon
- Cheese Sauce - 2 tablespoon
- Refined oil
To make Sauce
1. Take a heavy bottom pan and put a tablespoon of butter into it. Once the butter melts. add in a spoon of refined flour. Mix it well and do not stop stirring until you detect the aroma of a roasted flour.
2. Lower the flame and add a a cup of milk into it. Stir it continuously until a uniform slurry is formed.
3. Bring it to boil. Now add oregano, chili flakes, salt and black pepper.
4. Stir the sauce slowly and let it simmer.
5. Now take mayonnaise in a bowl and add milk to it. Mix the contents until a uniform mixture is formed. Repeat the same with a cheese sauce and prepare a slurry of it.
6. Add the prepared mixtures into a sauce pan. Give it a stir and your sauce is ready.
To boil Pasta
1. Take a pan and put water into it. Add a spoon of salt and two spoons of refined oil and set it to boil.
2. Once you see water boiling, add in the pasta. Give it a stir. Observe the pasta carefully and ensure it does not overcook. Drain out the pasta into a strainer when it is 90% cooked.
3. Put the strainer under a stream of running water and then take a generous amount of oil and give it a good mix. Let it rest.
To make pasta
1. Take a pan and put a spoon of butter into it. Let it melt. Now add onions into it. Once the onions turn brown, add other vegetables namely capsicum, carrots and corn.
2. Once the vegetables are half cooked, transfer them into the saucepan and give it a good mix. A uniform sauce is obtained. Adjust the consistency by adding more milk if required.
3. Now, add the pasta into it and mix them well. Your bowl of mac 'n cheese is ready to be eaten.
Suggestions
1. Instead of using herb butter, go for ordinary salted butter.
2. You can add a host of other vegetables like baby corns, broccoli, colored bell peppers or any other vegetable you fancy. Ensure that you blanch baby corn or broccoli before to precook them to an extent.
3. Instead of using cheese sauce, you can opt for cheese slices or processed cheese cubes. Just add them into the sauce directly.
