Eggless Banana Pancakes

It's time for something sweet. YAY! I love pancakes and they are best for a quick breakfast or even a dessert after dinner. The recipe is extremely simple yet satisfying. Follow the simple steps and you are ready to pamper yourself.

Ingredients

  • A ripe banana
  • Whole-wheat flour (about a cup)
  • A pinch of salt
  • A pinch of cinnamon
  • Skimmed milk (as per consistency)
  • Buttered sugar (as per taste)
  • White sugar (4 tablespoons)
  • Heavy Cream (2 tablespoons)
  • Vanilla essence (2 drops)
  • Baking powder (1 teaspoon)
  • Unsalted butter
  • Almonds (4-5)
  • Raisins (4-5)
  • Fennel seeds (1 teaspoon)
  • White sesame seeds (1 teaspoon)
Procedure

  1. Take a banana and mash it finely in a bowl. Add a teaspoon of cinnamon powder.
  2. To prepare buttered sugar, add 4 tablespoons of white sugar into a sauce pan with four tablespoons of water. Let the sugar melt. Now add one tablespoon of butter into the pan. Stir the contents rigorously until to receive powdered sugar.
  3. Add the prepared sugar into the banana mash and give it a stir. Keep it aside.
  4. Take about one cup whole-wheat flour into a bowl. Add a pinch of salt and a teaspoon of baking powder into it. Give it a mix. 
  5. Now add about half a cup of skimmed milk into the banana mash. Add half of the flour mixture into the bananas and give it a mix. Add the other half of dry ingredients and adjust the consistency of the mixture using milk to form a lump free mixture. Let the batter stand for about half an hour.
  6. To prepare caramel sauce, add four tablespoons of sugar into a sauce pan. Let the sugar char. Then add a tablespoon of heavy cream into it and give it a mix. Your caramel sauce is ready.
  7. To prepare the nut dressing, chop the almonds and raisins and add fennel and sesame to it. Keep it aside.
  8. To make pancakes, pour the batter onto a heated nonstick tawa greased with butter. Cover the pancake with a glass lid for uniform heating and steam cooking. Flip the pancake after 2-3 minutes and toast the other side. Similarly prepare the other pancakes in the manner described above.
  9. For assembly. place a pancake on a platter. Sprinkle the nut mixture on top of it and drizzle some caramel sauce (reheat if required).
  10. Stack the pancakes in the manner prescribed above. Finally make a web of caramel sauce on top of it and sprinkle nuts on top.
  11. Your pancakes are ready to be eaten!
Suggestions

  • You can use cane sugar instead of white sugar.
  • You can use ghee instead of butter.
  • You can use coconut milk instead of skimmed milk.
  • You can also add caramelized bananas as you topping.
